Tri Tip with Onion Jam & Gorgonzola
Quick Tri Tip Sandwich with Sweet-Spicy Onion Jam & Gorgonzola Crumbles
Ingredients:
1 package fully-cooked beef tri-tip roast 1 crusty baguette or artisan bread, sliced 1/4-inch-thick sweet-spicy onion jam gorgonzola cheese crumbles, to garnish
Sweet-Spicy Onion Jam:
2 cups yellow onion, diced 1 cup granulated sugar 1/2 cup beef stock 1/2 cup white wine vinegar pinch red pepper flakes (to taste) 1 bay leaf
Cooking Instructions:
- Place all jam ingredients in a small, heavy-bottom saucepan. Bring to a boil; reduce the heat to a slow simmer. Simmer uncovered, allowing the liquid level to reduce by one-half. Cover and chill.
- Prepare Harris Ranch beef tri-tip roast according to package instructions. Thinly slice roast across the grain.
- For appetizers: place slices of roast on crusty baguette, spread onion jam on beef and sprinkle with gorgonzola cheese crumbles to garnish. For sandwiches: spread onion jam on two pieces of artisan bread, pile with sliced beef and add gorgonzola crumbles.
Chef's Tip: Increase or tame the spicy flavor of the sweet-spicy onion jam by adding red pepper flakes to your taste!
