Ingredients:

  • 1 pound Ground Beef (95% lean)
  • 8 ounces uncooked linguine, broken in half
  • 1 small red onion
  • 1 container (8 ounces) fat-free sour cream
  • 3/4 cup salsa verde
  • 4 cups fresh baby spinach leaves
  • 2 small plum tomatoes, sliced
  • 1 avocado, sliced
  • 1/4 cup chopped fresh cilantro leaves

Cooking:

  1. Cook pasta according to package directions; drain. Set aside.

  2. Meanwhile, cut 1/4 of onion into thin slices; set aside. Chop remaining onion. Heat large nonstick skillet over medium heat until hot; brown Ground Beef with chopped onion 8 to 10 minutes, breaking beef up into 3/4-inch crumbles.

    Cook's Tip: Cooking times are for fresh or thoroughly thawed ground beef. Ground beef should be cooked to an internal temperature of 160°F. Color is not a reliable indicator of ground beef doneness.
  3. Stir in cooked pasta, sour cream and salsa. Reduce heat; simmer 5 minutes or until heated through.

  4. Divide spinach evenly among four plates. Spoon beef mixture over spinach. Top with tomatoes, avocado, sliced onion and cilantro.
