Apricot Gin Sauce

Ingredients:

  • 1 cup shaved fennel bulb
  • 1 cup dried apricots
  • 1 cup dry gin
  • 1/2 cup water
  • 1/4 cup lemon juice
  • 1 tablespoon zested lemon peel
  • 1-1/2 teaspoons finely chopped fresh rosemary

Cooking:

  1. Combine all ingredients in small sauce pan. Bring to boil, then reduce heat and simmer for 10 minutes on medium heat, stirring occasionally. Set aside to cool.

    Add gin apricot mixture to blender. Cover and process on high 1 to 2 minutes until combined. Press sauce through fine mesh strainer.
