Whiskey-Glazed Blue Cheese Burger with Crispy Onions

A steak-knife worthy burger stacked high with crispy onions and glazed with the sweet bite of his favorite whiskey. This is the perfect burger for celebrating any Dad in your life, any day of the week.

INGREDIENTS:

  • 1 1/2 pounds ground beef, preferably 90% lean or leaner  
  • 1 1/2 teaspoons steak seasoning 
  • 1/4 cup whiskey 
  • 1/4 cup ketchup 
  • 2 tablespoons soy sauce 
  • 2 tablespoons honey 
  • 1 teaspoon dijon mustard 
  • 1 teaspoon Worcestershire sauce 
  • 1/4 teaspoon cayenne pepper or to taste 
  • 1/4 teaspoon pepper 
  • 4 slices tomato
  • 4 lettuce leaves
  • 4 ounces blue cheese
  • Beer-Battered Crispy Onion Rings (you can make your own, we like this recipe)
  • 4 brioche-style buns, toasted (or go over the top with these Salted Honey Butter Cornbread Brioche Burger Buns)

DIRECTIONS:

  1. Combine Ground Beef and steak seasoning in large bowl, mixing lightly but thoroughly. 
  2. Lightly shape into four 1/2-inch thick patties.
  3. Place patties on grid over medium, ash-covered coals and grill, covered, 8 to 10 minutes. Or over medium heat on preheated gas grill, grill 7 to 9 minutes. Using an instant-read thermometer inserted horizontally into center, check for 160°F internal temperature. 
  4. About 2 minutes before burgers are done, place buns, cut sides down, on grid. Grill until lightly toasted. During last minute of grilling, generously brush glaze on burgers and top each burger with cheese.
  5. Build burger on toasted bun starting with tomato and lettuce. Place burger patty and top with warm Whiskey Glaze. Place onion rings on patty and drizzle with more Whiskey Glaze before topping with bun. 
  6. Serving Suggestion: Use a steak knife to help keep this impressive burger stacked before serving.

WHISKEY GLAZE:

To make the Whiskey Glaze, add the whiskey, ketchup, soy sauce, honey, mustard, Worcestershire, cayenne and pepper to a small saucepan. Bring to a boil and then reduce the heat to a simmer. Simmer 5 minutes or until the sauce has thickened slightly. Keep warm over low heat until ready to serve (or store in the fridge and warm before serving).

Optional Whiskey Aioli:

To make Whiskey Aioli, whisk together 1/4 cup mayo, 1 tablespoon whiskey, 1 clove minced garlic, 1/4 teaspoon smoked paprika, then add sea salt and fresh-cracked pepper to taste. Give each bun a good smear of aioli before building your burger.
